Pickling red onion is quick and easy, and can add a nice tangy bite to any dish. And, since this is a quick pickle, it can be done about 15 minutes before you need it.
Ingredients
1/2 Red onion
3/4 c. Red wine vinegar
1Tbs. Pickling spices
1Tbs. Fennel seed
1Tbs. Mixed whole peppercorns
2-4 Tbs. Salt
Honey, to taste

I tend to like vinegar-based items to have a nice punch, so I tend to add a bit more salt to give the vinegar a nice bite, but you can really play around with these ingredients and fine a flavor you like. I mix us the vinegar, spices, round it out with a little honey for sweetness, then throw in the red onion slices which I cut on the mandolin. Let them sit in the fridge for about 15 minutes, and they’re ready to eat.
